Kale Pesto

My kale pesto came about because I didn’t have parsley in my garden, and then I ran out of pine nuts, so I did what any home cook would do: improvise! You can choose to soften the kale by massaging the leaves with olive oil, or, in the case of this recipe, I found blanching softens the leaves for blending and lessens the bitterness of the kale.

    Step 1

    Bring a medium pot of salted water to a boil.

    Step 2

    Fill another bowl with ice and water.

    Step 3

    Blanch the kale for 25 seconds, then remove it and place it in the ice water.

    Step 4

    Dry the kale in a colander or salad spinner.

    Step 5

    Combine the kale, basil, garlic, sunflower seeds, olive oil, and lemon juice in a blender and blend for 2 minutes or until smooth. Season to taste with salt and pepper.

    Conclusion

    If you want a chunky pesto, pulse rather than blend it. If you want a creamy pesto, blend it for a couple more minutes.
