If you’ve had eggs benedict, then you have had hollandaise sauce, a buttery, yellow sauce of egg yolk and, in this case, clarified butter, or ghee. Clarified butter has a higher smoke point than butter, and the milk and water have been removed from the butterfat, which means it’s acceptable to anyone who is lactose intolerant.

    Step 1

    Add the egg yolks, lemon juice, paprika, and salt to a blender and blend on low for about 30 seconds. Slowly drizzle in the warm melted ghee and fully blend.

    Step 2

    The sauce will emulsify and can be used immediately. If it starts to thicken, just mix in a little bit of hot water.
