These delicious Courgette fritters are perfect at any time of day and can be dressed up or down to suit. For breakfast, pair them with bacon and eggs, at lunch try them with smoked salmon and crème fraîche, or for dinner add a side of steamed kale and some Harissa Dressing. Healthy, versatile, and delicious.
